Why Slow-Carb?


Let’s take a look and understand what carbohydrates are. Carbs form glucose which are transported in the body through the blood before it’s absorbed by the cells and converted into energy. The more refined the carbohydrate is, the faster it gets into the system which causes sugar levels to rise and fall quickly. ( i.e. the sugar high and crash)

Slow carbs are foods with low glycemic load or low glycemic index. In a nutshell, the lower the G.I. ( glycemic index ), the slower it’s broken down,and the higher the G.I., the faster broken down. The G.I. reveals how higher blood glucose levels can rise within two hours.
so what are carbs with high G.I. and low G.I.?

carbs with high G.I. are refined meaning the digest with and give a rapid surge of blood and insulin in the body. These can found in foods such as white bread, cereal, pastries, etc.

You can take a guess what carbs with low G.I. are: complex carbs. The more complex, the longer the digestion which causes slower and a more sustained release of energy which also allows you to feel fuller longer. You can find them in grains, oats, fruits, veggies, and lentils. This book focus on veggies, which have the most variety of complex carbs, and legumes.
